Celler de Les Aus "AUS" Alella Pét-Nat 2023

Pale green color and lightly cloudy. Floral, white fruit (pear, green apple) and herbaceous (fennel) aromas with a subtle background of green almond. Light and refreshing on the palate, with pleasant electric bubbles. Mineral and tense, but lightly floral and a pretty, dry finish.

While this producer makes excellent, classic cava, this is their experimental Pét-Nat style wine, from pure Pansa Blanca, otherwise known as Xarel-lo. Alella is an appellation located just outside Barcelona.

Josep Maria Pujol-Busquets and Cristina Guillen, today along with their daughters Mireia and Georgina, started their organic winery in the 1980s, and continues its pursuit of offering natural wines and cavas made with low intervention and no added sulfites.

The label features some of the beautiful birds that can be heard singing from the vineyards, surrounded by the Serralada National Park.
