Fidora "Il Fondo" Prosecco DOC Frizzante NV
Prosecco "Il Fondo" follows the secondary fermentation method also known as "Pét-Nat" or "Ancestrale," characterized by the deposit of the yeasts on the bottom: it is made according to the traditional method, which was used since ancient times, of a second fermentation in the bottle without disgorgement. The result is a dry, fruity and refreshing wine with hints of green apple, white peach, a splash of citrus on mineral background and a fresh and harmonious mouthfeel. The prolonged contact with the yeast confers on it a sapid and decisive finish and a well-balanced flavor, with bread crust aromas. Ideal as an aperitif-wine as well as throughout a meal.
The Fidora family has been producing wine in Venice since 1927. In 1974, it started its pioneering organic farming project and today, at its 4th generation, the company is proudly carrying on with Biodynamic farming in all its estates.
