
Montinore Estate "Vivacé" Extra Dry Prosecco DOC NV
Vivacé (ve - vä - che) : Italian for “in a brisk and spirited manner”, aptly describes this crisp, aromatic sparkling wine produced from organically - grown vineyards within the Prosecco D.O.C. Refreshing and lively, each sip will put a little extra vivacé in your step!
Pale straw in color, and clean, fresh and fruity, this easy-drinking Prosecco gives you what you want with aromas of fresh apples, lemon zest, white flowers and a hint of ginger. Soft bubbles gently roll on the palate as vibrant citrus flavors introduce white peach, lemongrass honeysuckle, green apple, candied lemon zest and honeydew. The balanced acidity and body allow for a lingering finish with a touch of sweetness.
The soft pressed juice undergoes initial fermentation at a constant temperature for 8/10 days. After a storage period, the winemaker blends the Prosecco Spumante base cuvée. Subsequently the base wine is filltered and combined with saccharose and selected yeasts to undergo second fermentation in the Martinotti-Charmat method.
