Disko Chardonnay Santa Barbara County 2022

100% Chardonnay, organically farmed at Oak Savannah Vineyard in Los Olivos, Santa Barbara County. This is not your mom's Chardonnay. Vibrant, fresh take from the hot days and cool nights of the region.

Fermented with native yeast in concrete eggs and aged 11 months in neutral French oak barrels for 10 months on the lees. Minimal sulfur additions. Unfined, unfiltered.
 
Disko's goal is to bring the old world to the new world in one of the youngest, yet “best” climates there is – Santa Barbara County. All of their wines are fermented with native yeast, minimal sulfur additions and aged in neutral vessels. High acid, low alcohol. Nothing added, nothing taken away. Beauty and simplicity.
