It's multilayered, with subtle fresh black pepper enhanced by red roses, black cherries, smoke and graphite, with depths of black raspberry, licorice and grilled herbs. The finish is complex and long, marked by a savory mineral snap and a distinct salty edge. Spicy and wild, brambly and herbal. A benchmark \"natural\" wine that perfectly captures the sun-drenched yet elegant character of southeast Sicily.\u003c\/p\u003e\n\u003cp\u003eThe certified organic, biodynamically farmed grapes were grown on 25-year-old vines and harvested by hand. Spontaneous fermentation in concrete tanks on the skins with indigenous yeast. Vinified in concrete and aged for 12 months in large French oak before finishing in concrete again for one year.\u003c\/p\u003e\n\u003cp\u003eCOS was founded in 1980 by three friends and legends in winemaking, Giambattista Cilia, Giusto Occhipinti and Cirino Strano (the initials of their last names form the winery’s name), yet the winery itself dates to the 1880s. Sicily has a long history of winemaking, dating back to the 8th century BCE when the Greeks first planted grapes in the eastern part of the Island. It is only more recently though that true top quality wines and winemaking have arrived there.
