It's completely dry, but generous with the fruit character, with flavors of ripe peaches and lemon zest and a texture a reminiscent of ocean water. \u003c\/p\u003e\n\u003cp\u003eCalcite is the predominate geologic parent material of the soils found in the Cienega Valley. It is an ancient type of limestone which is extremely rare in California. This wine represents the typicity of this region’s alkaline soils and the dynamic of the warm day\/cold night diurnal shift climate that allow the grapes to ripen and retain freshness..\u003c\/p\u003e\n\u003cp\u003eThe grapes were organically farmed and picked by hand over several passes from vines ranging in age from 25 to 60 years old. The winemaking emphasizes minimal intervention: the Riesling undergoes 24 hours of whole-cluster maceration for added texture and aromatics, while the Chardonnay is direct-pressed. The juice settles naturally, ferments spontaneously with native yeasts in barrel and ages on lees with low sulfur additions. Unfined and lightly filtered.
