Wavy Wines "Super Californian" 2023

Wavy Wines "Super Californian" is a red natural wine made from grapes from Siletto Vineyards in San Benito County, and described by the winemakers as "a fake reverse Super Tuscan." This year included a large mix of varieties, starting with Merlot (50% whole cluster), Barbera (destemmed), and Freisa (50% whole cluster) all co-fermented together. Then small lots of Mourvedre, Sagrantino, Cabernet Franc, and Grenache were direct pressed in and macerated until the ferment went dry. All of this was done in open-top stainless steel fermentors without the addition of sulphur. Drink chilled.

Wavy Wines is a Los Angeles-based natural wine project formed by Jude Zasadzki & Eliot Kessel. They make wine from organic grapes, using only native yeast.
