Chiflado Blanco is a natural white wine from the Querétaro region of Mexico crafted from Xarel-lo, a Spanish grape traditionally prominent in Cava production. Crisp, fresh and aromatic with bright acidity, clean fruit flavors of green apple and grapefruit and light floral notes.
100% Xarel-lo from the estate vineyard planted 1910 meters above sea level on clay rich soils. Chiflado practices responsible farming with no chemical additives and works the land in a more thoughtful and sustainable way. Direct press, fermented and aged in stainless steel tank.
Most people in Mexico know Xaime Niembro as one of the country's most celebrated Mezcaleros, a pioneer in bringing regenerative agriculture to Oaxaca's agave farms. But few know he's also become the face of one of Mexico's most exciting wineries.
Chiflado translates roughly to "crazy" or "cuckoo" in Mexico, a nod to Xaime's audacious vision to make fine wine in Mexico's Altiplano. The colorful label art depicts the celebratory masks worn at traditional festivals across Mexico to welcome the rainy season.
Queretaro sits above 6,000 feet, higher than Denver. For context, high elevation sites in Europe like Alto Adige, Priorat and Mount Etna rarely exceed 2,000 feet. That elevation, combined with the region's proximity to both the Gulf of Mexico and the Pacific, creates a truly rare growing season: very warm springs ripen the grapes early, and harvest must happen quickly, before the tropical storms of August and September risk diluting the fruit and stalling its phenolic maturity. The result is a region primed for fresh, low-alcohol wines with crisp texture and subtle minerality.
