Parés Baltà Brut B Cava

Golden yellow color reflective of its aging, with an intense nose offering notes of pastries and lactic touches on a background of very ripe white fruits. Smooth entry on the palate, with a balanced full, structured presence. Fresh, clean and dry, it offers creamy textures and green apple, nutty, mineral and floral flavors, with a long and complex aftertaste.

A young and lively organic sparkling wine, Parés Baltà’s Brut cava is a blend of the three traditional varieties of the Penedès: Parellada (62%), Macabeu (24%) and Xarel-lo (14%). The Parellada, from the highest mountains of the region, provides the freshness, the Macabeu gives it the fruit and the xXrel-lo gives it the body. The three varieties complement each other creating a perfect synergy of aromas and freshness.

The grapes are farmed biodynamically and harvested by hand. After a gentle pressing, the wine, made with minimal intervention, is fermented separately at 16 °C in stainless steel vats for two weeks. A second fermentation is done in the bottle according to the traditional method, then aged for approximately 24 months.

There are very few Penedès Cavas with more pedigree. Parés Baltà is one of the most iconic wineries in the Penedes region of northeast Spain, just 30km from the Mediterranean cost and Barcelona. Founded in 1790, the estate was one of the founding members of the Cava D.O. The cava cellar was constructed in the beginning of the twentieth century, stone by stone. Located 10 meters underground with a natural and constant temperature of 14-15ºC, it is perfect for aging cava.

Since its inception, Parés Baltà has always been a family winery linked from its origins to viticulture and agriculture, in which all members of the family have been involved. For the past 20 years, third-generation viticulturalists of the family, brothers Joan and Josep Cusiné, handle the farming, while their respective wives María Elena and Marta, who studied oenology at the University of Tarragona, make the wine. They have been certified organic since 2002, and gained their biodynamic certification in 2012. Parés Baltà was named one of the top 100 wineries in the world in 2024.
