Chavost Blanc de Chardonnay Brut Nature Champagne

Pale straw in color, this vibrant and distinctive Champagne opens with aromas of lemon peel, quince, green apple and pear layered with fresh brioche, yeast and subtle nutty notes. Fine, persistent bubbles carry a crisp, lively palate of citrus and white fruit accented by chalky minerality, saline freshness and a delicate creamy texture. Lean, focused and beautifully dry, it finishes long with a refreshing lemony edge.

Made from 100% Chardonnay sourced from organically farmed clay-limestone vineyards in Chavot-Courcourt in the Coteaux Sud d'Épernay, this cuvée uses only the first pressing of the grapes. Vinified without added sulfites, commercial yeasts or enzymes, the wine undergoes natural alcoholic and malolactic fermentation without fining or filtration. Aged for four years on its lees, it develops added aromatic complexity and texture while retaining the purity and precision of Chardonnay. Bottled without dosage, it is a wonderfully expressive example of Champagne Nature.

Champagne Chavost is a small cooperative winery in the Vallée de la Marne, originally founded in 1946 by approximately 20 growers and now representing more than 100 multi-generational winegrowing families. Since taking the reins in 2019, young winemaker Fabian Daviaux has led an ambitious transformation of the estate, convincing its members to embrace organic farming and a radical commitment to additive-free winemaking. Across the range, the wines are made without added sulfites, dosage or commercial yeasts and enzymes, allowing the fruit and terroir to speak for themselves.
