An expressive, fresh, clean, medium-bodied, succulent Chablis with solid acidity. Flavors of tree fruits, passion fruit, mint, lemon, lime, pineapple, kiwi, cream, vanilla, minerals and floral notes lead seamlessly into the clean and dry finish that exhibits very fine length.

Domaine Servin, run by François Servin, has a history dating back to 1654. The Servin family has held land in Chablis since the 16th century, serving as farmers, coopers and winemakers. Past generations of Servins were growing Chardonnay in Chablis as far back as the 16th century, when the monks in the local monastery cited their vineyards as the source of superlative fruit.

The lieu-dit of “Les Pargues” is a site the Servins (and anyone who’s tried today’s wine) believe was wrongly left out of the Premier Cru club when the classifications were drawn up back in the 1920s and ’30s. The vines are exclusively on Kimmeridgian limestone soils, which gives the wines excellent minerality. With 32ha across all four quality tiers, Servin's vines are over 50 years old and have been propagated from cuttings from the best vines in Les Pargues, leading to exceptionally complex Chablis. Les Pargues is situated between two Premier Crus and shares soil and exposure.
