80% Carignan and 20% Mourvèdre handpicked in small crates followed by selective sorting. Skin maceration, then carbonic maceration with no added sulfites. Eight months in concrete tank. Grapes destemmed, with 30% of the stems retained and added after vatting. Blended before alcoholic fermentation. No sulfites added during production. Native yeast fermentation.
