
Fossil & Fawn "Do Nothing" Red Blend 2021
Do Nothing is a chillable, fruity light wine. The name refers to how Fossil & Fawn makes it and what you should do when you drink it. An ever-changing mix of white and red varieties (currently 80% Pinot Noir, 20% Chardonnay) sourced from dry-farmed, own-rooted, organic vines dating back to the '70s were fermented wholecluster carbonically, sealing bunches in vats that were left outside for 30 days to experience the natural, diurnal fluctuations in temperature. The winemakers literally do nothing during this time. The fruit sits and ferments without any intervention.
After pressing, 50% of the juice goes into stainless steel tanks and the remaining balance goes into old French oak barrels where it finishes fermentation over the next five months. The wine is bottled without fining or filtration. The aroma is explosively fruity and sweet, while the palate is light, bright, and rocky. Dry but punch-y with great structure and go-back-for-more acidity. It tastes like Hawaiian Punch and river rocks, and is perfect with just about everything or perhaps preferably, nothing at all. You're going to want a few bottles of this one.
Fossil & Fawn started out as an idea in the summer of 2011, and quickly transformed into a much more complex and unbelievably rewarding venture. The winemakers aren't interested in bold manifestos or style declarations -- their goal is to make wines that they like. They’ve found that the kind of wines they like, and thus the wines they make, are executed with a natural approach that allows the vineyard to do the talking.
