Southold Farm & Cellars "Cup of Ambition" 2021
The Trebbiano was harvested August 25th and fermented on the skins for roughly two weeks in both stainless steel and concrete. After pressing the wine was aged 40% in concrete and 60% in neutral French oak. This wine was fermented with native yeast and bacteria and is unfined and unfiltered.
Winemakers Regan and Carey Meador have always been more curious about the more subtle side of skin contact white wines. A more delicate approach to skin fermentation, this carries with it so much more freshness, aromatics that jump out of the glass. Cardamom, orange blossom, a touch of green tea, even some white pepper.
Only 636 cases were produced, and no more will be made, as the winemakers closed their winery near Fredericksburg last year and moved to Bourdeaux, France.
