BXT "Immersion" Brut Napa Valley Sparkling Wine 2024

Beautiful floral notes of summer meadow and freshly cut hay on the nose, along with pure golden orchard fruit, baked bread, seashell, preserved lemon and subtle hazelnut. Juicy, bright and fresh on the palate with notes of baked apples and pears, lemon curd, dried cherries, tangerine pastries and orange spice. Fantastic balance and length, fine bubbles and crystalline acidity. The mousse is rich and creamy with zero dosage, creating crisp and dry finish.

BXT is inspired by the grower-producer movement in Champagne. Winemaker Tom Sherwood farms organically and produces truly hand-made artisanal sparkling wine across a handful of special sites in Northern California. Immersion is a vintage blend of 46% Pinot Noir, 36% Chardonnay and 16% Pinot Meunier from seven organically-farmed vineyards. Grapes were gently pressed, oxidatively handled and fermented with native yeasts in used French oak. The wine was assembled and hand-bottled in February of 2025 after completing primary and malolactic fermentation, without fining or filtration. After aging on the lees for 12 months, the bottles were hand riddled and then disgorged without sulfur or dosage.
