In the glass, the wine displays a brilliant golden straw color with a persistent stream of exceptionally fine bubbles. The nose is expressive and layered, opening with aromas of ripe apple, Bosc pear, white peach, Meyer lemon and preserved citrus alongside notes of brioche, toasted almond, hazelnut, acacia blossom and crushed chalk. On the palate, the wine is generous yet beautifully composed, combining a creamy mousse with vibrant acidity and impressive mineral definition. The Pinot Noir contributes breadth, subtle red apple fruit and quiet vinosity, while the Chardonnay lends lift, citrus freshness and precision. Flavors of baked orchard fruit, lemon curd, roasted nuts, fresh pastry, and chalky minerality unfold with remarkable balance, leading to a long, focused finish marked by citrus zest, toasted brioche, saline freshness and lingering limestone notes. Paul Dethune Brut is a complex, traditional non-vintage Champagne from Ambonnay, France, crafted from 70% Pinot Noir and 30% Chardonnay, including 30-50% reserve wine aged in oak tuns, which guarantees a very consistent quality. The grapes are farmed organically and sustainably and harvested by hand.
Paul Déthune is one of Champagne's great family-owned grower estates, producing Grand Cru Champagnes that reflect more than four centuries of continuous viticulture in the village of Ambonnay. The Déthune family's roots in the village date to 1610, making them one of Ambonnay's oldest winegrowing families. While generations of the family cultivated vineyards for centuries, it was Paul Déthune who established the Champagne house that bears his name, laying the foundation for the modern estate (1930). The small organic winery consists of seven hectares of land, lovingly cultivated by Pierre Déthune. It produces nine Grand Cru wines, each undergoing malolactic fermentation and aging in the winery’s cellars, which which were cut out of the chalk in the 17th century.
Today, Pierre and Sophie Déthune lead the fifth generation, continuing a philosophy that combines deep respect for tradition with thoughtful innovation and an unwavering commitment to sustainability. Rather than pursuing large-scale production, they remain dedicated récoltant-manipulants (RM), growing their own fruit and overseeing every stage of production from vineyard to bottle. Every cuvée is produced exclusively from Grand Cru vineyards, reflecting the exceptional quality of Ambonnay and the estate's singular focus on terroir.
