Cuvelier Los Andes Cabernet Sauvignon 2019
A high-intensity ruby red color and attractive berry, currant and fresh-tobacco aromas follow through to a very intense and spicy medium-bodied Cabernet with notes of white pepper, great texture and balance. It is indulgent with reactive tannins, dry extract and a monolithic palate lit up by the alcohol.
Cuvelier's Cabernet Sauvignon hails from Vista Flores, in Valle de Uco, Mendoza, at the foot of the Andes Mountains. The harvest is picked by hand at the right maturity. Grapes are collected into small 12 kilo crates to ensure the integrity of the fruit, and then double-sorted in the cellar. First, full clusters are sorted by hand. After clusters have been de-stemmed, an additional selection by hand is completed, berry by berry. The grapes are gravity-loaded into the fermentation vats for maceration with indigenous yeasts, then aged for 12 months in French oak barrels. The barrels are used for three years, with a third of the stock being replaced each year.
