Parés Baltà Pink Cava
Pale rosé color with a very good sparkling crown of bubbles. On the nose, it smells of red fruit with a light note of flowers. In the mouth it is crispy and fresh with hints of strawberries and raspberries. Long, sweet and pleasant finish. A delicate and elegant cava with smooth bubbles and a predominating touch of pure red fruits that bring more complexity to this fresh and crispy sparkling wine.
A blend of Grenache and the indigenous catalan varieties Parellada and Macabeo, made according to the traditional method. The grapes are farmed biodynamically and harvested by hand. After a gentle pressing, the wine, made with minimal intervention, is fermented separately at 16°C in stainless steel vats for two weeks. A second fermentation is done in the bottle according to the traditional method, then aged for approximately 18 months.
There are very few Penedès Cavas with more pedigree. Parés Baltà is one of the most iconic wineries in the Penedes region of northeast Spain, just 30km from the Mediterranean cost and Barcelona. Founded in 1790, the estate was one of the founding members of the Cava D.O. The cava cellar was constructed in the beginning of the twentieth century, stone by stone. Located 10 meters underground with a natural and constant temperature of 14-15ºC, it is perfect for aging cava.
Since its inception, Parés Baltà has always been a family winery linked from its origins to viticulture and agriculture, in which all members of the family have been involved. For the past 20 years, third-generation viticulturalists of the family, brothers Joan and Josep Cusiné, handle the farming, while their respective wives María Elena and Marta, who studied oenology at the University of Tarragona, make the wine. They have been certified organic since 2002, and gained their biodynamic certification in 2012. Parés Baltà was named one of the top 100 wineries in the world in 2024.
